Pre-faction war the doomguard created a species of creature that fed on the borders of the elemental planes, tearing holes in the fabric that seperated the planes from each other. I am really interested, are there stats for these creatures?

Well, I don't think it's quite what you're looking for, but the stats for the Unraveller in the Planar Handbook would work very well for that in 3.5ed. The description of it actually has it operating in the exact opposite manner as the doomguard critters, but its powers seem like they could fit the bill anyway. (Immune to all elemental planar conditions, can disintegrate a target by separating it into its component elements)

They're called entropes. They're statted in Denizens of the Inner Planes, which you can download for free.

Unravelers were called menglis in 2nd edition. They are indeed pretty much the opposite of entropes, and the two monsters originated in the same book, the Planescape Monstrous Compendium Appendix III.
