I am kind of curious what you think the LAs for medium elementals (and psudo elementals and praelementals) would be just for the heck of it

Depends on what they get for powers and stats, how big they are, and how much you want your players playing them.

I think they have stats for the main 4 elementals types as PCs in Savage Species.
