This ice-cream (or ice-scream as many people call it) is elaborated with milk and some sweet lichens. When it is mixed and left to freeze, it grows in size and it gets a white color dotted with green. Its most unusual feature is that it makes a series of hollow tunnels inside that echo the winds of the plane. It is very appreciated among bleakers and the Gatehouse always has this dessert for sale.
